Quail Eggs in a salad would make a great starter or a tasty accompaniment to a main meal of fish or meat. Ingredients include 6 hard boiled quail eggs, 2 tomatoes, lettuce, croutons and your favorite dressing. Make your own croutons out of bread toasted and cut into squares. Sprinkle a small amount of virgin olive oil and Worcestershire sauce over your croutons.
To make the sweet and sour dressing try 3 table spoons of virgin olive oil, 1 clove of garlic chopped up, half a table spoon of caster sugar, 1 to 2 tablespoons of white wine vinegar and 1 to 2 tablespoons of lemon juice. Hard Boil six quail eggs and allow to cool before peeling the shell off. Then cut the quail eggs in half and place in the salad bowl last. Chop up the lettuce and tomato and place in the salad bowl. Add the Croutons. Mix the chopped garlic, virgin olive oil, white wine vinegar and lemon juice. Heat on low in a pan and then drizzle over the salad.
